Take raw hamburger meat, for example. When you mix salt with meat, the proteins from the meat bind with the salt and it helps to hold the meat together. Perfect when making hamburger patties. And another magical bonus? When salt and raw meat proteins combine, it helps to retain moisture so you get an extra juicy burger (or any meat!) when you’re grilling.
