Grilled Spicy Chicken Fajitas

Roasted peppers, onions, jalapenos plus grilled chicken wrapped in flour tortillas equals a tasty spicy chicken fajitas made right at home.

Instead of taco Tuesday, make it a fajita Friday with spicy chicken fajitas. The best part is that instead of going out, you can grill out at home!

You can make fajitas with steak, chicken, pork, shrimp or tofu, so if you’d rather a spicy steak fajita or a spicy tofu fajita (for the vegetarians who love to grill), switch out the chicken. This recipe is forgiving and customizable to your taste. You can switch out the meat, add more jalapenos, exclude the onion or add shredded cheese.

Keep the heat out of the kitchen and on your plate by cooking everything on your SABER® grill. Cook the peppers and onions on the SABER® stainless griddle while the chicken is grilling. Warm up tortillas on the griddle too!

Ingredients

  • 1 pound skinless, boneless chicken breasts
  • 2 Tablespoons soy sauce
  • 1 Tablespoon lime juice
  • 1 Tablespoon honey
  • 1/2 jalapeno pepper, seeded and minced
  • 1 clove garlic, minced (1/2 teaspoon of minced garlic or 1/8 teaspoon of garlic powder)
  • 1 medium onion, sliced
  • 1 large bell pepper, sliced
  • Flour tortillas

Directions

  • Mix soy sauce, lime juice, honey, jalapeno pepper and garlic.
  • Place chicken in a resealable bag or container. Pour marinade over the chicken. Toss to cover.
  • Let chicken marinate for at least 12 hours to overnight.
  • Preheat grill.
  • Grill chicken on medium heat until the internal temperature is 165°F, measuring with a digital thermometer.
  • On a skillet on the grill side burner, saute the onion and pepper in a little oil.
  • Toast the tortillas on a grill griddle or directly on the grate.
  • Remove chicken and let rest for at least 5 minutes. Cut into slices, cutting against the grain.
  • Assemble your fajitas with peppers and onions and enjoy!
