Ingredients

  • 1 pineapple, peeled
  • 1 red pepper, minced
  • 1 jalapeño, minced
  • 3/4 cup cilantro, mince
  • 5 tablespoons lemon juice
  • 3 tablespoons red onion, minced
  • 1/2 teaspoon salt

Directions

  • Preheat Saber Grill to high heat.
  • Cut pineapple in half lengthwise. Cut each half into 1/2-inch slices. Cut the core from each slice.
  • On high heat, grill the pineapple slices so that both sides are well-caramelized. Remove from heat and let cool.
  • Dice the grilled pineapple. Combine with remaining ingredients and serve.

Tip: If you enjoy a spicier salsa, add more jalapeño or a few drops of your favorite hot sauce.
