Grilled Chicken and Corn Quesadillas

Quesadillas are a great meal to whip up on the grill and can be stuffed with any number of ingredients to suit even the pickiest eaters.

Moms—you know the drill. You get home. You ask the kids what they want for dinner. You think tonight they might finally reach a consensus. But no. Moments later and you feel like a short order cook, thanks to the numerous different entrée choices your children have suggested. (Does PB&J count as an entrée?)

Have no fear, moms. SABER has got your back. When you’re facing shrugs and “I dunnos” about what to put on the table for dinner, quesadillas offer the perfect solution. Whip up these grilled chicken and corn quesadillas and set out as many toppings as you want. (We like avocado and red peppers.) With endless possibilities, your kids can create their own custom dinner and you can sit back, relax and enjoy the benefits of a hassle-free dinner that tastes amazing— and gives your kids exactly want they want.


  • Chicken breast
  • Corn-on-the-cob
  • Cheddar Cheese
  • Flour tortillas


  • Preheat Saber® grill to high heat
  • Place corn on the grill, seasoned with a dash of salt and pepper
  • Place chicken on grill and season with any spices of your choosing (from salt & pepper to taco seasoning, whatever suits your fancy). Grill until cooked through.
  • Place flour tortillas on grill and sprinkle generously with shredded cheddar cheese.
  • While cutting the grilled corn off the cob, bring one quart of heavy cream to a boil on the sideburner.
  • Sprinkle chicken and corn onto tortilla and top with a second tortilla. Cut into wedges, serve, and enjoy!
