Grilled Beemster Bruschetta

For a fresh, light appetizer…try this grilled beemster bruschetta that will melt in your mouth.

Bruschetta is a time-tested classic that’s proved itself again and again. Don’t believe us? Try finding a restaurant that doesn’t offer some form of a bruschetta appetizer. Turns out, though, you don’t have to go out to dinner to get a taste of this Italian favorite. Instead, fire up your SABER® grill and toast up some French bread to make an easy first course that pairs well with nearly any entrée.

The secret ingredient that makes this appetizer is the beemster cheese, a type of Gouda manufactured in the Netherlands. Beemster is aged longer than usual in order to give it its perfect texture and rich flavor. If serving the bruschetta to kids, you might want to purchase a milder beemster with a creamier taste. If all goes well, work your way up to varieties with longer maturation dates and more nuanced flavors. As for Mom and Dad? This appetizer is the perfect accompaniment to a glass of red wine.

Pro Tip: Make sure you taste the cheese both before and after you grill it up. Its distinct flavor either alone, or as an ingredient in the bruschetta, will be unlike anything you’ve ever tasted.


  • French bread (sliced)
  • Olive oil
  • Beemster cheese
  • Tomato
  • Red onion
  • Basil
  • Balsamic vinegar (optional)


  • Preheat Saber® grill to high heat
  • Drizzle olive oil on the sliced french bread before placing on grill, flip once before topping with diced tomatoes and red onions
  • Place slices of beemster cheese on top and allow to melt before removing from grill
  • Garnish with basil leave and balsamic vinegar before serving
