Grilled Bacon Wrapped Lamb Chops

You’ll be licking your fingers with full bellies in a BBQ-bacon, lamb chop ecstasy after grilling up this recipe!

My 13-year-old son is somewhat of a carnivore. That kid sure does love meat…well good meat anyway! It was love at first bite when he had his first filet mignon and when he first tasted a lamb chop at about age 7, it rocked his world!

I have had my children in the kitchen cooking and baking alongside me since they were about 3. You know how it goes: we let them crack the eggs, measure the flour and sugar, lick the bowl. All the things we did at our parents’ and grandparents’ knees. Food memories are some of my best memories. My children have not only learned to cook as a result of our time spent together in the kitchen, they have learned planning, project management, follow-through, math, science and so much more.

My son recently turned 13, and is a responsible kid, so I decided to introduce him to the grill. He of course is very interested since, soon after he cooks it, it will end up in his belly! Even though we live in Pennsylvania, you can find us grilling all year long come rain, sleet, snow or hail. After all, almost nothing compares to the flavors of grilled food!

I am easing him into it. He’s learning how to place meat on the grill, turn it and check for the different levels of doneness. So far, he is enjoying himself and impressing a few of his buddies while he’s at it. Last weekend, he had a couple of his friends over when I called for him to come and “man the grill.” He came right away because he knew we were having lamb chops and we talked about wrapping them with bacon. So, video games and buddies or not…he was at my side in an instant! Bacon & lamb chops trump video games…any day, especially when they are coming at you hot off of the grill!

Connor wrapped those beauties in bacon, he put them on the grill, managed their cooking (I had him make 1 batch at a time so he would not get overwhelmed) and not long after, all of us – including his buddies – were licking our fingers with full bellies in a kind of BBQ-bacon, lamb chop ecstasy! Bacon really does make everything better!

Since parsley is often hailed as an overlooked super food, I figured why not use it to make a flavorful pesto? So I did and it was fantastic! Even though some of the chops were drizzled in “green,” those boys were reaching for more…so you know it must be good!

Make these Grilled Bacon Wrapped Lamb Chops for an appetizer or for great game day grub. You could also turn them into a nice meal by adding some grilled vegetables or a fresh salad alongside.

Grilled Bacon Wrapped Lamb Chops with Parsley Pesto


  • 12 lamb chops
  • 12 slices bacon
  • 1 Tablespoon garlic, minced
  • 2 shallots, minced
  • 1 cup parsley, chopped
  • 1 teaspoon lemon zest
  • 1 Tablespoon fresh lemon juice
  • 1/4 cup grapeseed or olive oil
  • Salt and pepper, to taste


  • Pre-heat SABER grill to medium-hight heat.
  • Season the lamb chops with salt and pepper and set aside.
  • Partially cook bacon in microwave, oven or stove-top for about 1.5-2 minutes or until it releases some grease and is slightly cooked without any crispness.
  • Wrap each chop with a slice of bacon, securing in place with toothpick.
  • Place chops on pre-heated grill and cook for about 3-4 minutes per side.
  • Combine garlic, shallots, parsley, lemon zest, lemon juice, grapeseed/olive oil in small bowl. Mix well.
  • Place small amount of parsley pesto over-top each chop and serve.
