Grilled Fruit Recipe

Grilled fruit salad is a healthy dessert with natural sugars that caramelize on the grill. Eat them right off the grill or add a scoop of ice cream.

Grilled fruit is a healthy alternative to satisfy your sweet tooth. When fruit is grilled, the natural sugar caramelizes, creating a deep flavor reminiscent of a decadent dessert. Always toss or brush your fruit with a little oil before grilling to prevent sticking and add another layer of flavor. To amp-up the natural sweetness, sprinkle the fruits with brown sugar, honey, or maple syrup as well.

TIPS: Grilling fruit is a simple process, but keep in mind that different types of fruits will grill differently. Hard fruits like apples and pineapples, are the easiest to grill because they hold their shape and texture. Softer, more delicate fruits like peaches and mangoes, need a little nurturing while on the grill, or they’ll become mushy (and messy). You can grill them with the skins on and peel once cooked. The fruit will cook quickly, so stick close-by with a close eye!

Ingredients

  • Ripe Pineapple
  • Peaches
  • Mangos
  • Nectarines
  • Pomegranate
  • Dessert Rub: (cane sugar, cinnamon, lime zest, vanilla bean, lavender)
  • Fresh Mint
  • Vanilla Ice Cream (optional)
  • Equipment: Cutting board, Vegetable peeler, Tongs, Chef knife

Directions

  • Pre-heat SABER® grill to medium-low heat.
  • Combine the cane sugar, cinnamon, lime zest, vanilla bean and dried lavender in a bowl. Mix and set aside.
  • Peel and de-core the pineapple, cut in 8 parts length wise (like spears). Roll in flavored sugar. Set aside.
  • Trim the bottoms of the asparagus with a vegetable peeler. Brush with olive oil and season with salt and pepper. Set aside.
  • Cut peaches and nectarines in half and remove the pits. Flesh side down, press in the flavored sugar. Set aside.
  • Peel and slice the mango around its pit, keeping it in big pieces. Dredge in flavored sugar. Set aside.
  • Place pieces of fruit on pre-heated and lightly oiled grill, and cook until fruits are golden brown, lightly charred on all sides and the sugar has begun to caramelize.
  • Remove from grill and let cool slightly.
  • Garnish with fresh mint leaves and pomegranate seeds.
  • Serve immediately (with an optional scoop of vanilla ice cream).
